I already passed this on to Mark Connaughton (an officer of Cryovita) 
but CryoNet.folks might have some improvements to suggest. 

My suggestions is to stand up 4 or 6 4x8 foot sheets of either 1 or 2 
inch styrofoam and tape the joints with duct tape.  Use one sheet for 
a floor and protect it with a sheet of plywood.  This give you an open 
top room 4x4 or 4x8 and 8 feet tall.  For the time involved, the heat 
loss through the wall should not be a problem.  Get a tall step ladder 
which can go over the wall.  Spray LN2 into the room till it gets as 
cold as you want it.  Go up the ladder, and down into the room.  The 
main advantage of this approach is that someone can watch from the 
ladder.  If the test subject keels over (or quits moving) rip the tape 
off one panel and let it drop.  This beats the heck out of trying to 
get a person out of a bigfoot dewar.  :)  Best of luck.  Keith
