Is there some mistake here? Your discussion of tagatose deals with its
CYTOprotective properties, not its CRYOprotective properties. It gives
a nice summary of the ability of tagatose to protect against various
poisons. 

Such an ability is fine and can often be useful. Its relation to 
CRYOprotection at least needs some explanation. As you no doubt already
know, the injuries of freezing happen much more from mechanical
disruption of the cells and their relations to one another than to
any chemical poisoning of them.
